1 tbsp olive oil
1 onion (chopped)
1 cup diced bacon (chopped into bits)
1 ½ cups Mama Sinmi’s Red Sauce
2 garlic cloves, finely grated
2 tsp dried thyme leaves
20 oz. Fresh Tortellini Pasta
1 spoon of grated parmesan (optional)
Heat the oil in a large sauce-pan and add onions and bacon bits. Cook over medium heat for 10 mins until the onion is soft and bacon is cooked.
Add Mama Sinmi’s Red Sauce, garlic and thyme, and cook for 3-5 mins. Reduce heat.
Cook the Tortellini according to the packaging instructions. Drain the pasta and add to your sauce. Toss well and add a little pasta water. Serve with a side salad and extra cheese, if you like.
