Good Food is truly a masterpiece 🌱 Seasoned black-eyed peas cooked in sweet corn and ripe plantains. A QUICK AND SUPER EASYMEAL I guarantee the kids will love and enjoy 😊 🌱💚 #follow my IG page for more flavorful recipes.
1 15.5 oz can of black eyed beans
1 cup of sweetcorn
1 large plantain (diced)
½ of a medium-sized onion
1 cup Mama Sinmi’s Red Sauce
1 tsp. salt, curry, ginger, pepper
¾ cup water or broth (Vegetable seasoning or any of your choice)
1 cooking spoon of palm oil
1 Bay Leaf
Chop 1/2 of the onion and add to your medium sauce pan. Cook the onions in the palm oil for about 5 minutes until tender on medium heat. Open and drain your can of black-eyed peas. Add it to your onion. Add your sweetcorn. Add the spices. Add the cup of Mama Sinmi’s Red Sauce. Cook on medium- high heat for 5 minutes. Add your diced plantains and ¾ cup of broth. Turn heat down to low. Cook on simmer for 15-20 minutes or until most of the broth is absorbed and plantain is cooked. Mix thoroughly together and serve with your favorite side dish. We traditionally serve it with rice or garri. I served mine with fried plantain and the directions are below. Enjoy.
•Heat 1/2 cup of canola oil in a nonstick pan over medium heat. •Add plantains and fry, turning frequently until golden brown and crispy.
